Makes 15-20 balls (depending on size)
Ingredients
1 cup dried apricots (preferably soft - not too dry)
1 cup almonds
1/2 cup desiccated coconut
1 tsp vanilla
1 tbsp maple syrup
1 tbsp tahini
1-2 tbsp water
Instructions
Place almonds into a food processor and blitz until crumbled.
Chop the dried apricots into smaller pieces and add to the food processor along with the coconut, vanilla, tahini and maple syrup. Blitz again to combine.
Gradually add water and blitz again until the mixture holds together well when squeezed.
Take a spoonful of mixture and roll into balls. Toss in extra coconut if desired.
Store in an airtight container in the refrigerator until ready to serve.
NOTES:
Where possible, use sulfur-free dried apricots if available. Otherwise look for organic or locally sourced (i.e. Australian) dried fruit.
If the apricots are hard, you can soak them in some warm water for 10-20 minutes beforehand to rehydrate. If doing this, make sure you strain them before adding to the food processor.
Use organic or locally sourced almonds if possible. I like to activate my almonds before using. This involves soaking them for 12 hours and then putting them in the dehydrator for 24 hours. I find this makes them taste better and the activation process brings them to life and also makes them more digestible. Check out more info here.
