Shitake Broth

Enjoy this medicinal shiitake broth as a light evening meal or use it during a cleanse or detox for three or four nights in a row to help to relax the nervous system.


Ingredients

2-3 dried shitake mushrooms

1 litre filtered water

1-2 tsp shoyu

soba noodles (cooked according to packet instructions)

spring onion for garnish

Method

  1. Place water and mushrooms in a saucepan and bring to the boil. Simmer for 10 minutes. Add shoyu to taste.

  2. Mushrooms can be kept whole or sliced (remove stalks) and returned to the pot.

  3. Place noodles in a bowl. Ladle broth over and serve with finely sliced spring onions.
